Chicken Alfredo is one of the easiest #keto meals we make at home. Sorry I don't have a photo. We ate it before I could take one.

Starting with the Alfredo sauce, it generally consists of:

  • heavy cream
  • parmesan cheese
  • black pepper
  • maybe some garlic and mushrooms to taste

The ingredients are all acceptable for keto. Generally, you just pour the sauce over something and it's an Alfredo dish. But, if we're making Fettucine Alfredo, you would normally add the sauce to chicken and fettucine noodles. Except noodles aren't keto. So, there are a couple of substitute options.

Zucchini noodles are tasty and acceptable. However, if you overcook them, they get soggy and fall apart. You have to blanche them quickly before adding the Alfredo sauce.

We have found that substituting broccoli or cauliflower fleurets is the best substitute. You can cook them slightly with the sauce, or blanche them and combine them later. You also want to avoid overcooking so that they retain some crunchiness. But you may prefer soft, noodle-like broccoli or cauliflower.

I prefer to pan fry the chicken breasts with olive oil, garlic, and black pepper. I find that the searing adds flavor to the chicken. Afterwards, I cut up the breasts into cubes before assembling the final dish with the sauce and broccoli.

In this dish, the greatest source of fat is the cream. Fat makes the food satisfying for much longer. I haven't tried it yet. But I've thought of adding a little bacon grease to help stave off hunger.
